Gluten-Free Flax Bread

 

This is a wonderful solution to the problem of gluten-free bread.  Most commercial options are expensive and not very appealing.   This, on the other hand, is healthy, tasty, and filling.  Thanks to my dear mother-in-law who bought us a bread machine with a gluten-free setting, it’s now also quick to make.  

 

Here’s the recipe we use:

 

Gluten-Free Flax Bread (1.5 lb loaf)

 

Liquid Ingredients

1 ¼ cup water

¼ cup oil

2t vinegar

3 eggs

Dry Ingredients

1 1/3 cup brown rice flour

2/3 cup ground flax seed

2/3 cup potato starch

1/3 cup cornstarch

1/3 cup skim milk powder

1 T xanthan gum

1 ½ t salt

3 T sugar

Yeast

2 ¼ t yeast

Instructions

  1. Put the liquid ingredients into the pan.
  2. Mix the dry ingredients in a bowl and then add to the pan.
  3. Make a well in the dry ingredients and add the yeast.
  4. Turn on the bread machine to make a 1.5 lb loaf.

 

**Note that ingredients should be at room temperature for a bread machine; do not warm the water.

 

We have tried this in the oven as well, but we couldn’t get the temperature and timing quite right.  The bread tasted good but looked a bit funny.  I think the key is to use a lower temperature and a longer baking time, but we’re not experimenting with that anymore now that we have the bread maker.
