French Strawberry Pie

After we went strawberry picking, we made a beautiful, delicious pie.  This is one of those magazine-cover, gourmet pies that wows people, but it is not overly high in calories unless you garnish it with whipped cream.

 

French Strawberry Pie

 

9” pie crust (we make gluten free pie crust)

 

Glaze mixture:

  • 4 c fresh strawberries, divided
  • ¾ cup water
  • 1/3 c honey*
  • dash of salt
  • 2 T cornstarch
  • 1 ½ T water        

Set aside 2 c of the best berries.  Chop remaining berries, place in saucepan with ¾ c water, honey and salt, and boil hard for 2 minutes.  Strain through a sieve with large holes.  Make a paste with the cornstarch and the 1 1/2 T water and add to the strained berries.  Cook mixture until thickened and then set aside to cool slightly.

 

Cream Mixture:

  • 4 oz cream cheese
  • 1 T honey*
  • 2 t lemon juice
  • 1 t vanilla
  • dash of salt          

 

Mix all ingredients and turn into baked crust.  Arrange the reserved strawberries on top of the cream cheese mixture.  Pour partially-cooled glaze carefully over the berries.  Chill. Garnish with whipped cream if desired.

 

ENJOY!

  

*Note that we actually used a mixture of sugar and water rather than honey, but have forgotten the exact proportions.  Using sugar water syrup is not as healthy as using honey, but it is much less expensive.
