One-Pan Pasta (Gluten-Free)

While camping on the shores of Lake Superior, we invented this simple and delicious recipe. With only a few ingredients, including prepared coleslaw, gluten-free sausages, rice noodles, and curry, we had a meal the children still talk about. 

 

It’s a very flexible recipe; vary the amounts, vegetables, and spices any way you wish.  We usually use ground beef rather than sausages when we’re at home.

  1. Cook ground beef in a large pan.  Add spices (curry, sage, garlic powder, paprika, salt and pepper) to taste.  You can substitute herbs such as basil and oregano, or use your favorite oriental spices.
  2. When the meat is cooked, add onions and garlic.
  3. Add chopped carrots, celery, peppers, and greens, as well as shredded cabbage.  Other vegetables that work well include broccoli, cauliflower, beans, zucchini, eggplant, and peas.  We just use what we have around.
  4. Break up oriental rice noodles and stir them, uncooked, into the vegetable-meat mixture.  At this point I often add a few tablespoons of water to the pot to prevent sticking, about 1 ½ T per pound of ground beef.  
  5. Cover the pan and cook at low heat stirring occasionally until the noodles are soft and the vegetables cooked the way you like them. 
  6. Adjust salt and spices as needed.
  7. Enjoy.

Notes:

  • When we use sausages, we add spices to the vegetables rather than the meat.  While the vegetables are cooking, I cut up the sausages and return them to the pan.
  • We have only made this recipe with oriental rice noodles.  I don’t know if wheat noodles or the rice noodle imitations of wheat noodles would cook this way.
  • Occasionally I’ve mixed in a thickened sauce, often based on sausage gravy.  A sweet and sour sauce would work as well.
  • We love this with LOTS of curry and paprika.  The cabbage also seems to add some oriental flavor. 
  • When we were camping, using prepared coleslaw made this meal super-easy.

  2. Again, a winner!! I love steamed veggies with that oriental twist, and cabbage is so healthy (and tasty)! I would love to know if you found oriental noodles that don’t contain ‘natural flavors’ or flavor enhancers. These additives give me and others here headaches and loss of focus. Warm blessings! Did you get snow?

    Our rice noodles contain only rice flour and water, and are made in Thailand. I didn’t know you could get the flavored ones.

    We had about 10 minutes of very wet snow. Nothing dramatic, and I like it that way!
