Yummy Gluten-Free Tofu Burgers (with Regular Options)

 

 

Last night, when I was home alone with our two Little Misses, we made tofu-burgers for supper.  They were so yummy that the three of us ate ¾ of a package of tofu!  These are very quick to make.  

  

Here’s the recipe, hugely adapted from SavvyVegetarian.  (Note that it doesn’t seem to matter which flours you use, so feel free to substitute.  We did not try any of the starches commonly used in gluten-free cooking.)

 

Yummy Gluten-Free Tofu Burgers

1 lb firm tofu, well drained

¼ c rice flour

¼ c sorghum flour or meal

¼ c corn flour

¼ c fresh or frozen basil, chopped, or 2 T dried basil

1 t paprika

¼ t ginger

¼ t dry mustard

¼ t garlic powder

½ t salt

a shake of pepper

 

1. Mash the tofu.  While it is in the package, I cut lines 1cm (~1/2 inch) apart in both directions, and then also cut down diagonally into the package the corners.  This simple step really speeds up the process.  Then I put all the tofu chunks into a flat-bottomed container, cut it some more with a knife, and finish mashing it with a potato masher.  You could also use a food processor, but this is quicker for me.

2. Add all other ingredients and mix well until clumps form.

3. Shape the mixture into patties of the desired size and fry in a little bit of oil on medium heat for 5-7 minutes on each side. 

4. Enjoy!

 

Options:

  • If your family eats gluten, you can use wheat flour and oats in place of two of the other flours. 
  • Other herb and spice options include parsley, thyme, dill, coriander, cumin, and cayenne.

 (While we are not vegetarian, we do occasionally eat meatless meals, usually because they are simple as well as tasty.  Such meals are usually a frugal choice as well.)
