Now that zucchini season is upon us, here are two of our favourite recipes, an old family favourite and one we first tried yesterday. They are both so easy and so delicious. In fact the first one we have used for quick company meals.
Barbequed Zucchini
Slice a large zucchini into 1 cm or ½ inch slices.
Brush both sides with olive oil.
Sprinkle with Montreal Steak Spice.
Barbeque on both sides until done.
My husband developed this recipe years ago and it was an instant hit. Try it with large zucchinis as well as little ones. I love the barbequed seeds in the middle of large ones, although large ones have peels too tough to eat. Do not peel before barbequing, though.
Zucchini Chips
Slice small to moderate size zucchini into very thin slices.
Dry using a dehydrator (we have not tried oven or microwave drying with these).
Dab chips with a napkin dipped in oil.
Sprinkle with salt, onion powder, or other seasonings.
My children decided this recipe needed the wee bit of oil to make the seasonings stick. They also decided they want zucchini nachos for supper this week. Sounds good to me!

Going to definitely try the BBQ zucchini- that sounds really good!
I wished we weren't allergic to BBQ sause. Maybe I can find one to make that I could use roasted pepper paste for the tomatoe replacement. Otherwise I am for sure going to try the zucchinni chips !!!! That sounds soooooooooo good ! Thank you b/c I am always on the hunt for GOOD zucchinni recipes. [0=
