We have a living room full of squashes and pumpkins so I’m always interested in new squash recipes. Well, over at Fresh Local and Best I found the brilliant idea of butternut squash oven fries. Rather than using that recipe (the kids don’t enjoy olive oil), I just adapted our regular oven fries recipe.
Here’s what I did:
1. Peel, seed, and slice enough butternuts for the family.
2. Toss them with oil in a glass baking pan or two. As with potato fries, they turn out better if they aren’t piled too high.
3. Bake at 400 for 15 minutes, remove from the oven, season with salt and pepper, and stir.
4. Return to oven for another 15 minutes and serve.
Note: If you like crispy fries, cook them for 20 minutes each time rather than 15 minutes.
The butternut fries were good with salt and pepper, but next time we’ll season them with garlic powder, salt, and paprika which is our favorite seasoning for oven-friend potatoes. Other seasoning options can be found at Fresh Local and Best.
Now my son, the official French fry maker in the family, is thinking about making breaded butternut squash in the deep fryer. I’m all for it!

I have never heard of preparing butternut squash this way! I am going shopping tomorrow–I’ll try it this week! It can’t hurt the kids:)

I just learned about spaghetti squash this year. The only thing I have ever eaten butternut squash in was soup. Thanks for the idea!

Thank you for this – I have two butternut squash’s sitting in my pantry, for the past month, in fact. I keep looking at them, undecided just what to do with them, how to prepare them. Now I know what I will be fixing for lunch on Tuesday!
